BIOPAN-S
“Biopan – S” is a dry sourdough starter for a quick production of rye and mixed-type bread, which is used as a dough leavening agent giving it the right organoleptic characteristics, typical of natural dough fermentation.
It is dosed in the amount of 2% in relation to rye flour. It can also be used as a souring agent for traditional sours to increase their acidity. The quality of bread made with Biopan-S is comparable to bread baked with traditional sour.
